Abstract

Our objective was to analyze in depth the probiotic properties of Lactobacillus pentosus strains isolated from naturally fermented Aloreña table olives in order to select strains with the best probiotic potential. Once the strain was selected, its characterization was carried out at the genomic level. In this sense, in silico analysis of L. pentosus MP-10 genome allowed us to determine the genes involved in probiotic properties as well as those involved in the safety and defense of the strain. On the other hand, the proteomic analyzes allowed to determine that the response of L. pentosus strains to the acids was dependent on the phenotype considered and the culture conditions, thus the analysis of the repertoire of induced and repressed genes allowed to determine for the first time the biomarkers of resistance to acids in the L. pentosus species being further implicated in other probiotic properties such as auto-aggregation.
