Resum

The analysis of biochemical markers of contents in ceramic vessels provides highly relevant information for archaeological research. Among such markers, lipids are the most commonly used. However, an approach to their advantages necessarily requires an appraisal both of the most suggestive research based on these organic remains and of the properties of lipids as biochemical markers. Finally, the results obtained through Gas Chromatography-Mass Spectrometry from a vessel recovered from the Roman site of Puente La Olla, Martos (Jaén), are also presented and interpreted.
