Abstract

The increase of organic food demand in Spain is a priority aim, for the sector and the civil service, in a context characterized for the continued development of the ecological agriculture in Spain. In this context, the main objective of this paper is to analyze the influence of some socio-demographic and economic variables in the consumption of organic food in Spain. Two conclusions have been infered. First, the influence of the variables depends on the kind of food, it is not always homogeneous. Second, the commercial distribution is decisive in the level of the demand, due to its influence on the price, for the olive oil, and the limited availability for vegetables and fruits.
