Abstract

Our objective was to investigate the incidence of antimicrobial resistance in lactic acid bacteria (LAS) isolated from the natural fermentation of Aloreña olives. For this, phenotypic and genotypic methods allowed to determine that LAB possessed a muftiple intrinsic resistance to severa! antibiotics, although they were sensitive to biocides. Also, we have determined the response of LAS to different types of stress obtaining a uniform phenotypic response, however the repertoire of genes up-regulated and down-regulated differed depending on the type of stress and the LAS strain. With the aim to improve stress tolerance of LAS, antimicrobial stress adaptation of a selected strain (Lactobacillus pentosus MP- 1O) allowed to adjust the proteomic arsenal of such bacteria as a survival strategy. On the other hand, we have analyzed the safety of a potentially probiotic Lb. pentosus MP-10 at genomic level and the results confirmed its safety.
