Abstract

The potential of UV treatment for the removal of pesticides in virgin olive oíl has been studied. For this purpose , the effect of UV treatment on 49 multiclass pesticides was assayed in olive oíl and water, including the identification of main transformation products and the toxicity prediction for the more relevant ones. In addition, the effect of the UV treatment on the chemical composition of virgin olive oíl has been assessed including the main quality parameters such as acidity , peroxide index or K232 and K270 , but also other relevant chemical parameters such as fatty acid profiles, total polyphenol content, tocopherols, volatile species, pigments and sensory analysis.
