Abstract

Exhausted olive pomace is the main residue of the olive oil industries. Due to its chemical composition, it is considered a raw material of interest for obtaining valuable chemical compounds. In this Doctoral Thesis, the valorisation of this residue has been carried out through the extraction of bioactive compounds such as hydroxytyrosol, mannitol and triterpenic acids, together with sugars and antioxidant lignins. For this purpose, different extraction techniques have been evaluated, including "green" technologies such as ultrasound and microwave-assisted extraction. The purification of bioactive compounds, mainly hydroxytyrosol, was also evaluated. Furthermore, the solid resulting from the extraction was subjected to an organosolvent delignification step in order to recover bioactive compounds from the lignin fraction and to obtain a hydrolysate rich in sugars in the framework of a biorefinery based on this agroindustrial residue.
