Abstract

The main objective is the study of the phenolic composition, as well as the antioxidant capacity and enzymatic inhibition activity, of plant species whose chemical composition and bioactivity are not known in detail, and may be potential sources of compounds of interest for the pharmaceutical or food industries. Likewise, the analysis of the fruits of different varieties of Olea europaea L. (olive) is carried out, also analyzing the mineral content and the influence of the digestion process by in vitro simulated gastrointestinal digestion. The selected plants and fruit species were collected at different locations in the province of Jaén. The following species were studied: - two species of the genus Berberis: B. thunbergii y B. hispanica - three species of the genus Sarcocapnos: S. enneaphylla, S. pulcherrima y S. saetabensis - Portulaca oleracea L. - four varieties of Olea europaea L.: Cornezuelo, Cornicabra, Picual y Royal.
