Resumen
The South American expansion of olive growing in the context of globalization: Scope and challenges. The consumption of olives and olive oil is deeply rooted in the Mediterranean culture, but it is becoming more and more global. In fact, the olive cultivation has already extended to countries that do not fit its peculiar climate pattern. In the propagation of this plant, we find repeated processes: The imports create or consolidate habits of consumption, which, in turn, raise the interest of growing for local and even international markets. The reasons for that is the gastronomic consideration, nutritious and healthy characteristics of these products (especially olive oil versus other vegetable fats), that make them be very well valued. The aim of this paper is to show the reasons and patterns of the new crops that are being deployed in South America. Examples of different countries will illustrate the existence of a great expansive cycle that faces important challenges, though.
