Abstract

The main objective of the research was to analyze the use of olive stones as a source of carbohydrates , ethanol and xylitol. For this, different hydrolytic methods and the nontraditional yeast Pachysolen tannophilus were applied. The raw material (endocarps in fragments from olive oil mili) is characterized by its small size (less than 5 mm) and its hardness (possibly because of the high lignin content). Endocarps have a carbohydrates percentage close to 55%. The study has optimized the process of acid hydrolysis of olive endocarps for maximizing the recovery of D- xylose in the acid hydrolysates . On the other hand, D-glucose production from solids residues was studied by enzymatic hydrolysis . Finally, acid and enzymatic hydrolysates were used for the production of ethanol and xylitol.
